Field peas are actually beans, not peas. Also called "cowpeas" or "Southern peas," these beans are similar in flavor and texture to blackeye peas. They are commonly used in the Southern dish "Hoppin' John" but can be used in a variety of dishes like a bean salad or soups or stews.
