The Devodier family has worked in the meat sector of Parma, Italy since the 1700s. In the 1950s, Enrico Devodier decided to follow his dream: he moved from the city of Parma to its surrounding hilly area, where he built the ancient cellars that still act as the core of the family's factory today. On April 18th, 1963, Enrico, together with his fellow ham producers of the Parma hills, founded the Consorzio del Prosciutto di Parma. This was a pivotal moment in Prosciutto di Parma's history, establishing minimum processing rules in order to guarantee quality standards, origin, and a territorial identity of the product.
Devodier's 36 month aged Prosciutto di Parma is the oldest prosciutto we carry. This cured Italian ham bears the honorable mark of the Consorzio del Prosciutto di Parma, signifying its exceptional quality and adherence to the rigorous curing processes. There are only four ingredients that go into this ham, and they are Italian pigs, salt, air, and time. The result is a bold and complex pork product layered with salty and sweet flavors with a silky texture. We hand-slice it on our slicer to order and our mongers are trained to dial it in at just the right thickness.
