This stunning jamón is made from a free-range 100% Ibérico pig. This amazing pig species nearly doubles its weight during the "Montanera" season (which happens from October through February) when it is feasting exclusively on acorns and grass. This special diet gives the cured ham a decadently buttery and nutty flavor as well as the beautifully marbled fat throughout which melts upon contact with your mouth. This ham is truly an out-of-this-world gastronomic experience.
Since Montaraz started out more than 130 years ago, they have maintained the traditional production process, respecting century old salting and curing processes in natural drying sheds. Salt and patience have always been their only preservation secrets.
