Housemade purple pancake mix with dehydrated Ube powder. Ube is a delicious and nutritious starchy purple yam. Contains: organic cane sugar, wheat flour, purple yam powder, baking powder, baking soda, sea salt

Due to the presence of anthocyanins in purple yam, the pancakes can change color depending on the pH of your pancake batter. With a pH less than 7 (acidic), the pancakes will be purple. With a pH greater than 7 (basic), the pancakes will be blue/green. To aid in the purple-ness of your pancakes, consider using ingredients such as yogurt, a squirt of lemon juice (this will also help leaven the pancakes for a fluffier pancake!), and buttermilk.

If you prefer the blue-green hue, consider ingredients such as whole milk, soy milk, oat milk, almond milk.
