Speck is a term that is used around Europe in reference to a pork product made from a boned ham that is moderately salted and seasoned, cold-smoked and then aged according to local practices and traditions.

Each region has its own typical production methods and we were very lucky when Speck dell'Alto Adige was allowed into the United States. Made in the region of Trentino-Alto Adige, in the more Germanic northern region of Alto Adige (as opposed to the more Italo-Venetian region of Trentino), this speck is leaner than prosciutto, has a lightly smoky aroma and a delicate meaty flavor that works perfectly as an antipasti.

    My husband has been longing for speck. Impossible to find near us. This beautiful speck is the real deal. Just over the border from Innsbruck, this Suedtirol speck is tasty, beautifully sliced and layed out so it's easy to plate up, and pairs well any artisan style bread. Mahlzeit!
